This little recipe is one of the easiest (although time consuming) recipes in the BBQ world, and is one of the tastiest too!
Bandit BBQ's ABTs
12 Fresh Jalapeno Peppers - 3" to 4" in Length (each pepper makes 2 ABTs)
8 oz Cream Cheese (One Package) - Softened
1/4 tsp of your favorite rub
24 'Pieces' of Pulled Pork or Chunks of Cooked Brisket
12 Thin Slices of Bacon - Halved
Wash, halve, seed, & clean the Jalapeno Peppers. Pat dry with paper towels.
Thoroughly blend the cream cheese and the rub. Generously spoon the cream cheese mixture into each of the Jalapeno Pepper halves. Top each pepper with a piece of pulled pork or chunk of cooked brisket.
Wrap each stuffed pepper with half a slice of bacon, use a toothpick to secure.
Cook the bacon wrapped peppers in your smoker, or on a grill over indirect heat, until the bacon is cooked through. At 225* to 250* it will take at least an hour. This is another one of those "low & slow" type of cooks...works best because of the bacon.

I'll add a little to this.
half the jalapenos and clean them out good. Put a layer of cream cheese in them, add a 'lil smokie cheddar sausage, close with both slices and wrap with bacon. I cook them for 2 hours to really soften the pepper up. |

You have to use cooked meat but make your ABTs as normal except do not wrap in bacon. Use your favorite meat such as pork sausage (fattie meat), Italian sausage, hamburger, etc. and put a layer of meat around the ABT. Smoke or grill as you normally would. Make sure you warn people that there is a "hot" center.
My version of Scottish Eggs.
I like to cut off the top of the jalapeno and dig out the seeds and membrane. Stuff in 1/2 a cocktail wiener with some flavored cream cheese. Wrap in bacon and cook in a chili stand. _________________ PCMCIA - People Can't Memorize Computer Industry Acronyms. – Unknown |
